Coconut Butter

4 cups Unsweetened shredded coconut

Add shredded coconut to a food processor or high powered blender. Blend or process on high for 10-15 minutes, scraping down the sides as needed. Once it turns to a liquid stage you've made coconut butter- it will be a slightly grainy nut butter consistency. Keep blending/processing to desired smooth consistency. Using a high powdered blender will result in a smoother butter. Pour into a glass jar to cool and solidify. Refrigeration is not necessary. Enjoy!
