Banana Chocolate Chunk Muffins
3 ripe mashed bananas
1/2 cup dairy free butter alternative (smart or earth balance)
3/4 cup coconut sugar
1 large egg
1 tsp bourbon vanilla
1 1/2 tsp baking powder
1 1/2 cups Better Batter GF All Purpose Flour
3/4 cup chopped dark chocolate*
Pinch of sea salt
*use chocolate made with coconut sugar to keep these refined sugar free
Mix all ingredients except the chocolate. Don't worry about making the bananas smooth chunks are good, fold chocolate into batter. Pour into a lined muffin tin. Bake at 350 for 25-30 minutes. Enjoy!
