Cardamom Breakfast Cookies
- 1 cup Oat Flour
- 3/4 cup Greek Yogurt
- 1/2 cup Coconut Sugar (or to taste)
- 2 Egg Whites
- 1 tsp Vanilla
- 1 tsp Baking Powder
- 1/2 tsp sea salt
- 2 tsp ground Cardamom or spice of choice
- 1 cup fruit of choice (I used 1/2 cup puréed cooked strawberries, 1/4 cup fresh chopped strawberries, 1/4 cup dried wild blueberries)
- 3 tbsp Genepro Protein Powder
Mix ingredients and fold in chopped fruit last. Drop 1 tbsp of batter on a parchment lined cookie sheet. Cook at 375 for 8-10 minutes. Cool and store in the fridge. Enjoy!
