Dark Chocolate Pudding1 large egg 2 2/3 cups milk of choice, divided 2/3 cup coconut sugar 1/8 teaspoon salt 1/3 cup dark cocoa powder 3 tablespoons arrowroot starch 2 teaspoons vanilla Optional- Paleo Caramel Sauce, chopped dark chocolate In a medium bowl mix together sugar, arrowroot, salt, and cocoa powder. In another bowl beat egg and 2/3 cup of milk well. Slowly add cocoa mixture to the egg mixture. Whisk well to dissolve the corn starch. Set aside. In a sauce pan over medium heat bring remaining 2 cups of milk to a slow boil. Remove from heat and slowly pour in egg mixture while whisking constantly. Return pan to medium heat and continue to whisk until mixture has thickened- about 3-5 minutes. Remove from heat and stir in vanilla. Serve warm or refrigerate.
