Quinoa Brownie WafflesPreheat a waffle iron. Blend smart balance/coconut oil, milk, eggs, and vanilla extract in a blender until combined. Add 2 cups cooked quinoa and blend until smooth, scraping down the sides of the blender with a rubber spatula as needed. Add remaining dry ingredients and blend until smooth. Pour batter into greased waffle iron. Check after 3 minutes. May take 5-6 minutes. Top with whipped cream. Enjoy!
