Tomato Butter Spaghetti
- 1 tablespoon extra virgin olive oil
- 1/2 cup chopped onion
- 2 cloves of garlic minced
- 3lbs tomatoes chopped
- 4 tablespoons butter
- Handful torn basil (optional)
- Parmesan cheese (optional)
- Salt and pepper
- 8oz cooked spaghetti (gluten free if required, Mueller’s is great!)
Over medium heat sauté onions in olive oil till softened. Add garlic and stir for 30 seconds. Carefully pour in chopped tomatoes and season with salt and pepper. Lower the heat to medium-low. Simmer till tomatoes breakdown. Add butter and simmer for 15-20 minutes. Salt and pepper to taste. Fold in cooked pasta. Plate with basil and Parmesan if desired. Enjoy!
