Paleo Maple Apple Fritters
1/4 cup Coconut Flour
1/8 cup Arrowroot Flour
1/2 tsp Baking Powder
1/4 tsp Apple Pie Spice
1 Egg
2 tbsp Coconut Milk
1/4 cup Maple Syrup
1/2 tsp Vanilla
1 Medium Apple cut into bite size pieces
1-2 tbsp melted coconut oil
Preheat oven 375, and line a baking sheet with parchment paper lightly brushed with coconut oil. Mix together the dry ingredients in a large bowl. Add the egg, coconut milk, maple syrup,and vanilla. Mix until well combined. Fold in the chopped apple. Spoon 1-2 tbsp of batter per fritter a couple inches apart on the baking sheet. Brush with melted coconut oil. Bake for 15-20 minutes. Enjoy!
